These Broccoli Bites are delicious, cheesy mini muffins packed with finely chopped broccoli and seasoned with garlic powder, perfect for a healthy snack or appetizer. They are quick to prepare, baked until golden and set, offering a nutritious and tasty way to enjoy vegetables.

  • Total Time: 25 minutes
  • Yield: 24 mini bites

Ingredients

Broccoli Bites Ingredients

  • 3 cups broccoli florets (finely chopped; about 1 large head of broccoli)
  • 1 1/2 cups shredded cheddar cheese
  • 3 large eggs (beaten)
  • 3 tablespoons white whole wheat flour (or all-purpose flour)
  • 3 tablespoons milk
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 3/4 teaspoon garlic powder

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and grease a mini muffin tin with cooking spray to prevent sticking.
  2. Mix Ingredients: In a medium bowl, combine the finely chopped broccoli, shredded cheddar cheese, beaten eggs, flour, milk, salt, black pepper, and garlic powder. Stir until everything is well incorporated.
  3. Fill Muffin Tin: Spoon the mixture evenly into the prepared mini muffin tin, filling each hole generously above the rim to create nicely shaped bites.
  4. Bake: Bake in the preheated oven for about 15 minutes or until the bites are set and golden on top.
  5. Cool and Remove: Let the Broccoli Bites cool for 5 minutes. Run a knife around the edges to loosen them from the pan, then carefully remove.
  6. Freeze (Optional): For freezing, bake and cool completely, then store in an air-tight freezer bag for up to 1 month.
  7. Reheat Frozen Bites: To prepare from frozen, microwave wrapped in a moist paper towel in 20-30 second increments until warmed, or thaw in the fridge then microwave briefly to heat through.

Notes

  • If you don’t have a mini muffin pan, you can bake these in a regular-sized muffin pan, but bake a little longer until the centers are set.
  • Broccoli Bites can stick to metal pans; soaking and gently scrubbing with a sponge helps cleaning. Using a silicone pan can make cleanup easier.
