Ingredients
For the Bruschetta:
- 4 Roma tomatoes, cored and diced
- ¼ cup fresh basil leaves, chopped
- 1 garlic clove, minced
- 1 tablespoon extra virgin olive oil
- 1–2 teaspoons balsamic vinegar
- Salt, to taste
For the Cheese Mixture:
- 8 oz feta cheese block, crumbled
- ½ block cream cheese (4 oz), softened
- ½ cup sour cream
- 1 garlic clove, minced
- 1 tablespoon fresh lemon juice
- 1 tablespoon olive oil
- Salt, to taste
For Garnishing:
- More basil leaves, chopped
- Red pepper flakes, to taste
- Parmesan cheese, freshly grated
Instructions
- Prepare the Bruschetta: Core and dice the Roma tomatoes into small cubes, removing seeds if desired for less moisture. In a medium bowl, combine diced tomatoes, chopped basil, minced garlic, extra virgin olive oil, balsamic vinegar, and a pinch of salt. Toss gently to coat evenly. Set aside to marinate for about 10 minutes, allowing flavors to meld and tomatoes to release juices.
- Make the Cheese Mixture: In a food processor bowl, combine crumbled feta, softened cream cheese, sour cream, minced garlic, lemon juice, and olive oil. Puree for 3 to 4 minutes until smooth and creamy, scraping down sides as needed for even blending. Taste and add salt sparingly, considering feta’s saltiness.
- Assemble the Dip: Transfer the cheese mixture into a shallow serving dish, spreading evenly to form the base layer. Spoon the marinated bruschetta mixture over the cheese layer, distributing the tomatoes and basil evenly. Garnish with chopped fresh basil, a sprinkle of red pepper flakes, and a generous amount of freshly grated Parmesan cheese to finish.
Notes
- Cheese Variations: Substitute feta with goat cheese, ricotta, or additional cream cheese for different textures and milder flavors.
- Tomato Variations: Cherry or heirloom tomatoes can be used instead of Roma, each adding unique sweetness or tanginess.
- Herbs and Seasonings: Experiment by adding fresh oregano, thyme, or parsley, or a dash of onion or garlic powder to enhance the flavor.
- Vegan Option: Replace dairy cheeses with plant-based alternatives like cashew cream, coconut yogurt, or dairy-free feta for a vegan-friendly version.
