Ingredients
Rolls
- 4 large crusty bread rolls (or 8 smaller ones)
Filling
- 1 tbsp olive oil
- 4 cooked sausages, cut into 1.5 cm (⅝ in) slices
- 160 g (5.6 oz) baby spinach
- 2 medium fresh tomatoes, chopped
- 40 g (1.4 oz) pine nuts
- Pinch of salt and black pepper
Topping
- 4 large free-range eggs (or 8 medium eggs if using smaller rolls)
Instructions
- Preheat Oven: Preheat your oven to 200°C (400°F), 180°C fan, Gas Mark 6 to ensure it’s ready to cook the breakfast rolls.
- Prepare Bread Rolls: Cut the tops off the crusty rolls and scoop out most of the soft bread from the center to create hollow bread bowls. You can save the removed bread for breadcrumbs later. Place the hollowed rolls onto a nonstick baking tray.
- Cook Sausages: Heat 1 tablespoon of olive oil in a nonstick frying pan over medium heat. Add the sliced sausages and fry for 2–3 minutes until heated through and slightly browned.
- Add Vegetables and Pine Nuts: To the pan with sausages, add the baby spinach, chopped tomatoes, and pine nuts. Cook the mixture for another 2 minutes until the spinach has wilted and all ingredients are hot.
- Season and Fill Rolls: Season the filling with a pinch of salt and black pepper. Spoon the sausage and vegetable mixture evenly into each hollow bread roll, leaving any excess liquid behind in the pan.
- Add Eggs and Bake: Crack one large egg into each filled roll. Place the rolls on the baking tray into the preheated oven and bake for about 15 minutes or until the eggs are cooked to your liking, whether soft, medium, or hard.
- Serve: Once baked, sprinkle additional black pepper over the rolls if desired. Serve warm for a flavorful and satisfying breakfast.
Notes
- You can use smaller rolls and adjust the number of eggs accordingly (8 medium eggs for 8 smaller rolls).
- The scooped-out bread can be blitzed into breadcrumbs and frozen for future recipes.
- Cooking time may vary depending on your oven and how you like your eggs cooked.
- For added richness, consider sprinkling some grated cheese on top before baking.
