Ingredients
Protein and Eggs
- 4 links turkey or beef sausage, casing removed
- 4 large eggs, lightly beaten
- 1/4 cup cottage cheese
- Kosher salt and freshly ground black pepper, to taste
Vegetables and Seasoning
- 1 cup shredded mixed cheddar cheese
- 1 Roma tomato, diced
- 1 small red onion, sliced
- 2 teaspoons sumac
- 1 tablespoon fresh lemon juice
- 1 tablespoon extra virgin olive oil
Other
- 1/2 cup hummus
- 4 8-inch flour tortillas
- Chopped fresh cilantro leaves and lime wedges, optional for garnish
Instructions
- Cook the Sausage: In a skillet over medium heat, cook the 4 links of turkey or beef sausage, breaking them apart with a spatula to crumble. Cook until fully browned and cooked through. Drain any excess grease and set the cooked sausage aside.
- Prepare Scrambled Eggs: In the same pan, scramble the 4 large lightly beaten eggs combined with 1/4 cup cottage cheese. Season with kosher salt and freshly ground black pepper to taste. Cook until the eggs are fluffy and fully set.
- Mix Seasoned Onions: In a small bowl, combine the sliced small red onion, 2 teaspoons sumac, 1 tablespoon fresh lemon juice, 1 tablespoon extra virgin olive oil, and salt to taste. Toss to coat and let the flavors meld.
- Assemble Burritos: Lay out each of the 4 eight-inch flour tortillas. Spread about 1/2 cup hummus evenly over the surface of each tortilla. Layer on the scrambled eggs, cooked sausage, shredded cheddar cheese (divide evenly), diced Roma tomato (divide evenly), and the prepared sumac-seasoned onions.
- Roll and Store: Roll each tortilla tightly into a burrito shape. Wrap each burrito in parchment paper and refrigerate until ready to eat.
- Reheat and Garnish: Reheat the burritos as needed, using a microwave or skillet until warm. Before serving, garnish with chopped fresh cilantro leaves and lime wedges if desired. Enjoy your flavorful breakfast burrito!
Notes
- You may substitute lean ground beef or ground turkey for the sausage links; season the ground meat with your favorite spices along with salt and pepper.
- Cooking the eggs with cottage cheese is optional, but it adds extra protein and a creamy flavor to the scramble.
- If sumac is unavailable, simply season the sliced onions with a pinch of salt to approximate the tangy flavor.
