This Bourbon Peach Upside Down Cake combines the rich flavors of bourbon caramel with sweet, tender peaches and a moist, fluffy cake. The caramelized fruit topping and spiced cake create an irresistible dessert perfect for any occasion.

  • Total Time: 55 minutes
  • Yield: 8 servings

Ingredients

Fruits

  • 4-5 peaches, cored and cut into wedges (skin on)

Caramel

  • 1 stick butter (8 tablespoons)
  • ¼ cup water
  • ½ cup sugar
  • 1 tablespoon bourbon
  • ¼ teaspoon cinnamon (for peaches)

Cake Batter

  • 1 ¼ cup sugar (divided as ¾ cup and ¼ cup)
  • 3 eggs
  • 1 cup all-purpose flour
  • ¼ cup almond flour
  • 3 tablespoons bourbon (divided as 2 tablespoons and 1 tablespoon)
  • ½ teaspoon cinnamon (divided as ¼ teaspoon for peaches and ¼ teaspoon for batter)
  • ½ teaspoon vanilla extract
  • 1 teaspoon baking powder

Instructions

  1. Preheat the Oven
Preheat your oven to 350°F (175°C) to prepare for baking.
  2. Prepare the Pan and Peaches
Line a 9-inch cake pan (avoid using a springform pan) with parchment paper and butter the parchment well. Arrange the peach wedges over the parchment, starting at the center and moving outward in a circular pattern. Sprinkle ¼ teaspoon cinnamon evenly over the peaches.
  3. Make the Bourbon Caramel
Combine ¼ cup water with ½ cup sugar in a saucepan. Stir gently to combine, then heat the mixture over medium-high heat without stirring until it turns a light brown color, about 10-15 minutes. Remove from heat carefully and quickly stir in 1 tablespoon bourbon. Pour this caramel evenly over the arranged peaches in the pan.
  4. Prepare the Cake Batter
In a mixing bowl, beat the butter and ¾ cup sugar together for about 3 minutes until the mixture is light and fluffy. Add the eggs one at a time, beating well after each addition. Beat in the vanilla extract and 2 tablespoons bourbon.
  5. Combine Dry Ingredients and Mix
In a separate bowl, whisk together the all-purpose flour, almond flour, baking powder, and remaining ¼ teaspoon cinnamon. Slowly add this dry mixture to the wet batter, mixing until just combined.
  6. Assemble and Bake
Pour the prepared cake batter evenly over the caramel-coated peaches and smooth the surface. Place the pan in the preheated oven and bake for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  7. Cool and Serve
Allow the cake to cool in the pan for 15-30 minutes to set the caramel. Carefully invert the cake onto a serving plate to reveal the beautiful bourbon caramel peach topping. Serve warm or at room temperature.

Notes

  • Use a standard 9-inch cake pan, not a springform pan; the caramel can leak out if a springform is used.
  • Line the pan with parchment paper and butter the paper thoroughly to help release the sticky caramel topping easily.
  • Monitor the caramel carefully as it cooks; it can quickly go from underdone to burnt without stirring.
  • Check doneness with a toothpick or knife; baking time might vary slightly because of the liquid caramel layer beneath the batter.
