A deliciously sophisticated twist on the classic grilled cheese sandwich featuring creamy double cream brie, sweet and tangy blackberry balsamic jam, and fragrant fresh thyme, all nestled between buttery sourdough bread slices grilled to golden perfection.

  • Total Time: 30 minutes
  • Yield: 4 sandwiches

Ingredients

Blackberry Balsamic Jam

  • 2 cups blackberries
  • 3 tbsp balsamic vinegar
  • 6 tbsp sugar
  • 2 tbsp lemon juice
  • Pinch of kosher salt

Main Ingredients

  • 300 g double cream brie cheese, sliced ½ inch thick
  • 1 tbsp chopped fresh thyme
  • 8 slices sourdough bread
  • Butter, as needed for frying

Instructions

  1. Make the Blackberry Balsamic Jam: In a saucepan, combine blackberries, balsamic vinegar, sugar, lemon juice, and a pinch of kosher salt. Bring to a boil over medium-high heat, then reduce heat and simmer. Use a wooden spoon or potato masher to break down the berries.
  2. Simmer Until Thickened: Continue simmering the mixture for 7 to 10 minutes until it reduces into a thick jam consistency. It will thicken further as it cools. Transfer to a small bowl and let cool.
  3. Prepare the Brie and Skillet: Slice the brie cheese into ½ inch thick slices. Heat a skillet over medium heat, ensuring it’s not too hot to avoid browning the bread before melting the cheese. You may need to cook in batches depending on skillet size.
  4. Assemble and Cook the Sandwiches – First Side: Butter one side of four slices of sourdough bread. Place these slices butter side down in the hot skillet. Top each with slices of brie. Cook gently until the bread is golden brown and the brie begins to soften. Sprinkle chopped fresh thyme over the cheese.
  5. Finish Sandwiches – Second Side: Spread a thick layer of the cooled blackberry jam onto the remaining four bread slices. Place these jam side down over the brie-topped slices in the skillet. Butter the top side of these slices. Carefully flip the sandwiches and continue frying until the bottom bread is golden brown and the brie is fully melted.
  6. Serve: Transfer grilled sandwiches to a cutting board and allow them to cool for a couple of minutes. Cut each sandwich in half with a sharp knife. Serve warm and enjoy.

Notes

  • Make sure the skillet is not too hot to allow the brie to melt without burning the bread.
  • The blackberry balsamic jam can be made in advance and refrigerated for up to 3 days.
  • Double cream brie works best for a creamy melt; feel free to substitute with other soft cheeses if desired.
  • Use fresh thyme for best flavor; dried thyme can be substituted but use less.
  • Butter the outside of the bread slices well to achieve a golden crispy crust.
