Ingredients
Filling
- 1 can low sodium black beans
- ½ white onion, diced
- 1 jalapeño pepper, diced
- ½ tsp cumin
- ½ tsp garlic powder
- ½–¾ cup vegetable broth or water
- Salt and pepper to taste
Flautas & Cooking
- 8–10 corn tortillas
- 2 tbsp canola oil (optional, for frying or brushing)
- ½ tsp chili powder (optional, for seasoning filling)
Toppings (Optional)
- Guacamole
- Cilantro
- Tapatio hot sauce
- Salsa
Instructions
- Prepare the filling: Drain and rinse the black beans thoroughly. Dice the white onion and jalapeño finely for the filling.
- Sauté aromatics: Heat a medium-sized pan over medium-high heat and add about 2 tablespoons of vegetable broth. Add the diced onion and jalapeño, cooking for about 5 minutes until the onion becomes translucent. Add more broth as needed to prevent sticking.
- Cook the beans: Add the black beans and the remaining vegetable broth to the pan. Cook for another 5 minutes until the beans are heated through and soft enough to mash with the back of a spoon. Stir in cumin, garlic powder, salt, pepper, and optional chili powder. Remove from heat and set aside.
- Warm tortillas: Heat a large griddle or skillet over medium-high heat. Once hot, warm tortillas for 30 seconds on each side to make them pliable and prevent cracking when rolled. Alternatively, you can microwave tortillas briefly. Set warmed tortillas aside on a large cutting board.
- Assemble flautas: Place a heaping tablespoon of the black bean filling onto each tortilla. Roll tightly to enclose the filling. Secure with a toothpick or place seam side down on the board. Repeat until all tortillas are filled and rolled.
- Choose a cooking method:
- Frying: Heat ¼ to ½ cup of canola or vegetable oil in a pan over medium-high heat. Once hot, carefully add 3-4 flautas at a time. Fry for 3-5 minutes per side or until golden brown and crispy. Drain on paper towels. Repeat with remaining flautas.
- Baking: Preheat oven to 400°F (204°C). Arrange flautas on a baking sheet and lightly brush with oil if desired. Bake for 16-20 minutes until golden and crispy, flipping halfway through.
- Air frying (recommended): Lightly brush flautas with oil if preferred. Place 4-5 flautas in the air fryer basket. Air fry at 390°F (199°C) for 11-12 minutes until crispy and golden brown. Repeat until all are cooked.
- Serve: Remove toothpicks if used. Serve hot topped with guacamole, cilantro, salsa, or Tapatio hot sauce for added flavor.
Notes
- Warming tortillas before rolling prevents them from breaking.
- Vegetable broth helps sauté without oil for a lower-fat filling.
- Use toothpicks to hold flautas closed during frying or baking.
- Air frying yields crispy flautas with less oil and mess.
- Adjust spice level by increasing or omitting the jalapeño and chili powder.
- Leftover flautas can be reheated in the oven or air fryer to retain crispiness.
