Delightfully crispy and sweet, these Biscoff Rice Krispie Treats combine classic marshmallow rice cereal with the rich flavor of Biscoff cookies and cookie butter for a unique twist on a beloved snack.

  • Total Time: 40 minutes
  • Yield: 16 squares

Ingredients

Dry Ingredients

  • 5 cups Rice Krispies Cereal
  • 7 Biscoff Cookies (6 broken up, 1 for topping)

Wet Ingredients

  • 4 tablespoons salted butter
  • ½ cup Biscoff Cookie Butter
  • 10 ounces marshmallows

Instructions

  1. Prepare Pan and Bowl: Grease a large mixing bowl and an 8-inch or 9-inch square pan with butter or baking spray to prevent sticking.
  2. Combine Cereal and Cookies: Pour the Rice Krispies cereal into the greased bowl, then break up 6 of the Biscoff cookies and mix them in with the cereal thoroughly.
  3. Melt Butter and Cookie Butter: In a medium saucepan over low heat, melt the salted butter together with the Biscoff cookie butter, stirring gently to combine.
  4. Add Marshmallows: Add the marshmallows to the melted butter mixture and stir occasionally until about 75% melted, then remove from heat and continue stirring and pressing down the marshmallows until fully melted and smooth.
  5. Alternative Melting Method: Optionally, melt the butter, cookie butter, and marshmallows in the microwave in 1 to 1 ½ minute bursts on high power, stirring each time until melted.
  6. Mix Cereal and Marshmallow: Pour the melted marshmallow mixture over the cereal and cookie pieces; stir until the cereal is well coated evenly.
  7. Press into Pan: Gently transfer and press the mixture firmly into the buttered baking pan using a spatula or wax paper to avoid sticking.
  8. Add Topping: Break the remaining Biscoff cookie into very small pieces and sprinkle over the pressed mixture, then press down lightly to help the cookie crumbs stick to the treats.
  9. Cool and Cut: Let the treats cool undisturbed for at least 30 minutes to set, then cut into 16 equal squares and serve.

Notes

  • Store treats in an airtight container at room temperature for up to 5 days to maintain freshness and crunch.
  • Use wax paper or a spatula to press the mixture into the pan without sticking.
  • For a softer texture, press the treats less firmly when shaping.
  • You can add a pinch of salt if using unsalted butter to balance sweetness.
