Ingredients
Shrimp
- 1 lb shrimp (peeled and deveined)
- 1/2 tsp paprika
- 1 tsp Italian seasoning
- 1/4 tsp salt
- 1/4 tsp black pepper
Pasta
- 12 oz penne
Sauce
- 2 tbsp sun-dried tomato oil
- 3 tbsp unsalted butter
- 2 tbsp minced onion
- 2 tbsp minced garlic
- 1/2 cup sun-dried tomatoes (finely chopped)
- 3 tbsp tomato paste
- 2 tbsp flour (or gluten-free all-purpose flour)
- 2.25 cups vegetable broth
- 1 cup heavy cream
- 2 cups fresh spinach
- 1 cup grated Parmesan cheese
- 1/2 tsp dried basil
- 1/4 tsp salt
- 1/2 tsp Italian seasoning
- 1/4 tsp paprika
Instructions
- Cook the pasta: Bring a large pot of salted water to a boil and add the penne. Cook according to package directions until al dente, then drain and set aside. Prepare all necessary ingredients by mincing garlic and onion, finely chopping sun-dried tomatoes, and measuring broth and cream.
- Season and cook shrimp: In a small bowl, toss shrimp with paprika, Italian seasoning, salt, and black pepper to coat evenly. Heat sun-dried tomato oil in a large skillet over medium-high heat until shimmering. Add shrimp in batches to avoid overcrowding and cook 2 minutes per side until pink and opaque. Transfer cooked shrimp to a plate and set aside.
- Sauté aromatics: Reduce heat to medium and melt butter in the same skillet. Add minced garlic, onion, and chopped sun-dried tomatoes. Sauté for 1-2 minutes until fragrant and onion softens. Stir in tomato paste, Italian seasoning, paprika, salt, and dried basil, cooking for 30 seconds to deepen flavors.
- Create roux and sauce base: Sprinkle flour over the sautéed ingredients and stir constantly for about 1 minute to cook out raw flour taste and form a paste. Gradually pour in vegetable broth while stirring to avoid lumps. Add heavy cream and bring to a gentle simmer. Cook 3-4 minutes until sauce thickens enough to coat the back of a spoon.
- Add spinach and cheese: Stir fresh spinach into the simmering sauce until wilted, about 1 minute. Remove from heat and incorporate grated Parmesan cheese until melted. Taste and adjust seasoning as needed.
- Combine pasta and shrimp with sauce: Add cooked penne to the sauce and gently stir to coat all pasta. Return cooked shrimp to the skillet and fold gently to warm through without breaking them. Toss all ingredients together until well combined.
- Serve: Portion the creamy shrimp pasta into serving bowls and enjoy immediately while hot.
Notes
- Do not overcrowd the skillet while cooking shrimp to ensure they cook evenly and stay tender.
- Overcooking shrimp can make them tough; cook just until pink and opaque.
- Use gluten-free all-purpose flour to make this recipe gluten-free if necessary.
- The Parmesan cheese adds saltiness, so adjust added salt carefully after adding cheese.
- For a richer flavor, use high-quality sun-dried tomato oil and fresh Parmesan.
- Work in batches to maintain even cooking and prevent shrimp from steaming.
