Ingredients
For the Meatloaf
- ½ cup seasoned breadcrumbs (gluten free preferred)
- ¼ cup unsweetened almond milk
- 1 pound ground turkey (93/7 lean to fat ratio)
- 1 large egg, lightly whisked
- ½ medium white onion, diced or grated
- 1 tablespoon Dijon mustard (or yellow mustard)
- 1 tablespoon ketchup
- 1 teaspoon dried parsley (plus more for garnish)
- 2 teaspoons Worcestershire sauce
- 1 teaspoon garlic powder
- ½ teaspoon kosher salt
- ¼ teaspoon ground black pepper
For the Tomato Glaze
- ¼ cup ketchup
- 2 teaspoons Worcestershire sauce
- 1 teaspoon real maple syrup (adjust to taste for sweetness)
Instructions
- Soak Breadcrumbs: Combine the almond milk and seasoned breadcrumbs in a medium bowl and let it sit for 5 minutes to allow the breadcrumbs to fully absorb the milk.
- Mix Meatloaf Ingredients: In a large mixing bowl, add the soaked breadcrumbs along with the ground turkey, whisked egg, diced onion, Dijon mustard, ketchup, dried parsley, Worcestershire sauce, garlic powder, kosher salt, and black pepper. Mix thoroughly but gently using your hands, a fork, or spoon until all ingredients are combined, being careful not to overmix.
- Preheat Air Fryer and Shape Meatloaf: Preheat the air fryer to 350°F (175°C). Line the air fryer basket with an air fryer liner or foil for easier removal. Shape the meat mixture into a rounded rectangle or wide circle approximately 2 inches thick, then place it in the air fryer basket.
- First Air Frying: Cook the meatloaf in the air fryer at 350°F for 12-14 minutes.
- Prepare Tomato Glaze: While the meatloaf cooks, mix together ketchup, Worcestershire sauce, and maple syrup in a medium bowl until well combined.
- Glaze and Final Cook: After the initial cooking time, carefully spread the tomato glaze evenly over the top of the meatloaf. Increase the air fryer temperature to 400°F (204°C) and cook for an additional 3-4 minutes until the glaze is golden around the edges.
- Serve: Remove the meatloaf from the air fryer. Garnish with additional dried parsley, let it cool for a few minutes to set, then slice and serve.
Notes
- Do not overmix the meat mixture; mix just until combined to keep the meatloaf tender.
- Use a meat thermometer to ensure the internal temperature reaches 165°F (74°C) for safe doneness.
- Use an air fryer liner or foil to make it easier to lift the meatloaf out of the air fryer basket without breaking.
- Allow the meatloaf to cool a few minutes before slicing to prevent it from falling apart.
- Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the air fryer at 350°F until warmed or use a microwave.
