Beef with oyster sauce is a flavorful stir-fry featuring tender and juicy beef flank steak paired with crisp asparagus. The dish is brought together with a savory and sweet brown sauce made from oyster sauce, soy sauces, and aromatics like garlic and ginger. Quick and healthy, it’s perfect for a weekday dinner and can be easily adapted to be gluten-free by swapping soy sauce for tamari and using gluten-free oyster sauce.

  • Total Time: 25 minutes
  • Yield: 4 servings

Ingredients

Marinating

  • 1 lb beef flank steak (or skirt steak)
  • 1/2 teaspoon baking soda
  • 1 tablespoon light soy sauce (or soy sauce)
  • 1 teaspoon peanut oil
  • 2 teaspoons cornstarch

Sauce

  • 1/2 cup chicken broth
  • 2 tablespoons oyster sauce
  • 1 tablespoon light soy sauce (or soy sauce)
  • 1 teaspoon dark soy sauce (or soy sauce)
  • 2 teaspoons sugar
  • 2 teaspoons cornstarch
  • 1 teaspoon sesame oil

Stir Fry

  • 2 tablespoons peanut oil (or vegetable oil)
  • 1/2 white onion, sliced
  • 3 cloves garlic, sliced
  • 1 thumb ginger, sliced
  • 1 lb asparagus, tough ends removed and cut to bite size pieces (or 1 bell pepper)

Instructions

  1. Marinate the Beef: In a medium-sized bowl, combine the beef flank steak with baking soda, light soy sauce, peanut oil, and cornstarch. Mix well to coat all pieces evenly. Allow to marinate while preparing the other ingredients. This tenderizes the beef and infuses it with flavor.
  2. Prepare the Sauce: In a small bowl, whisk together chicken broth, oyster sauce, light soy sauce, dark soy sauce, sugar, cornstarch, and sesame oil. Stir until the cornstarch is fully dissolved to prevent lumps. Set aside.
  3. Cook the Beef: Heat 1 tablespoon of peanut oil in a large skillet or wok over medium-high heat until hot. Add the marinated beef in a single layer without overlapping. Let it sear and cook undisturbed for about 1 minute until the bottom side turns golden brown, then flip and cook the other side for another 1 minute until just cooked. Remove the beef from the pan and transfer to a large plate.
  4. Sauté Aromatics: Add the remaining 1 tablespoon of oil to the skillet. Add sliced onion, garlic, and ginger. Stir-fry for about 2 minutes until fragrant and the onion softens.
  5. Cook Vegetables: Add the asparagus pieces to the skillet. Stir-fry for about 1 minute until they start to soften but remain crisp.
  6. Add Sauce and Thicken: Stir the sauce mixture again to ensure the cornstarch hasn’t settled. Pour it into the skillet with vegetables and aromatics. Stir constantly as the sauce thickens and coats the vegetables evenly.
  7. Combine and Serve: Return the cooked beef to the skillet. Stir well to coat the beef and asparagus with the thickened oyster sauce. Transfer everything to a serving plate and serve hot as a flavorful main dish.

Notes

  • For a gluten-free version, replace both light and dark soy sauces with tamari and ensure the oyster sauce used is gluten-free.
  • Beef flank or skirt steak are best for this recipe due to their tenderness and quick cooking time.
  • If asparagus is unavailable, substitute with sliced bell peppers for color and crunch.
  • Marinating with baking soda helps tenderize the beef for a juicier texture.
  • Ensure the skillet is hot before adding beef to get a nice sear and avoid steaming the meat.
