Ingredients
Beef Pepper Rice Sauce
- 2 tbsp low sodium soy sauce
- 1 ½ tbsp honey
- 1 tbsp oyster sauce
- 2 garlic cloves, grated or finely minced
- ½ – 1 tsp ground black pepper, more to taste
Beef Pepper Rice
- Avocado oil or any cooking fat, enough to lightly grease skillet
- ½ medium onion, thinly sliced
- ½ lb thinly sliced beef
- 1 ½ cups leftover white rice
- 1-2 tbsp butter or ghee
- ½ cup canned corn kernels or frozen corn kernels
- 2 green onions, sliced, more for garnish
- Ground black pepper, optional according to taste
Instructions
- Prepare the Sauce: In a bowl, combine the low sodium soy sauce, honey, oyster sauce, grated garlic, and ground black pepper. Mix thoroughly until all ingredients are well incorporated. Set the sauce aside.
- Heat the Skillet: Preheat a cast iron skillet or any heavy bottom skillet over medium-high heat. Add enough avocado oil to lightly grease the bottom of the skillet.
- Sauté Onions: Add the thinly sliced onions to the skillet and sauté for 2-3 minutes until the onions start to soften and become translucent.
- Cook the Beef: Push the onions to the center of the skillet to create a space around the edges. Place the thinly sliced beef around the perimeter of the skillet. Allow the beef to sit undisturbed for a couple of minutes to develop a slight sear.
- Rearrange Onions: After the beef has seared, push the onions to the perimeter alongside the beef, creating a well in the center of the pan.
- Add Rice and Toppings: Place the leftover white rice into the center of the skillet. Top the rice with the butter or ghee, then add the corn kernels and sliced green onions on top.
- Add Sauce and Combine: Pour the prepared Beef Pepper Rice sauce over the rice and beef mixture. Using a spatula, mix everything together thoroughly until well combined and evenly coated.
- Allow to Char: Spread the rice mixture evenly across the skillet surface and let it sit undisturbed for a couple of minutes. This allows a flavorful char to form on the bottom of the rice and beef.
- Final Mix and Seasoning: Stir the mixture again to combine and ensure the beef is cooked through. Optionally, add additional ground black pepper according to taste.
- Serve: Garnish with extra sliced green onions and serve hot for a delicious and hearty meal.
Notes
- Using leftover rice helps to achieve a better texture with less moisture and a crispier char.
- Thinly slicing the beef ensures quick and even cooking.
- Adjust the amount of black pepper to customize the spiciness of the dish.
- Butter or ghee adds richness; using more will make the dish more decadent.
- A cast iron skillet is preferred for better heat retention and to achieve the char.
- Leftover cooked chicken or pork can be used as a substitute for beef.
- Ensure to sauté the onions until softened but not browned for the best flavor balance.
