- ¼ Cup Parsley, finely chopped
- 2 Tablespoons Fresh Mint, finely chopped
- 2 Cloves Garlic, grated or finely minced
- 1 Egg
- 1 Teaspoon Cumin
- 1 Teaspoon Oregano
- ½ Teaspoon Coriander
- 1 Pinch Cayenne Pepper
- ½ Cup Gluten-Free Breadcrumbs
- 2 Tablespoons Neutral Oil (such as avocado oil)
- 1 Teaspoon Sea Salt
- ½ Teaspoon Ground Black Pepper
For the Tzatziki Sauce
- 1 ½ Cups Greek Yogurt
- 1 English Cucumber, peeled and chopped into small cubes
- 2 Cloves Garlic, minced
- 2 Tablespoons Lemon Juice
- 3 Tablespoons Fresh Dill, chopped
- 1 ½ Teaspoons Sea Salt
Instructions
- Mix Kofta Ingredients: Add all the kofta ingredients to a medium bowl and mix together thoroughly by hand for best results, or use a spoon if preferred.
- Form Kofta Kebabs: Wet your hands to prevent sticking, then shape the meat mixture into 4-inch long, 1-inch wide tubes around skewers. Aim to make about 12 skewers, adjusting size as needed.
- Heat Skillet and Oil: Place a cast iron skillet on the stove and heat over medium-high heat. Add 2 tablespoons of neutral oil and allow it to warm up.
- Cook Kofta Kebabs: Carefully place the skewers in the hot skillet. Let them cook undisturbed for about 2 minutes. Then, turn the skewers every minute until browned evenly on all sides. Remove from heat and rest on a plate.
- Prepare Tzatziki Sauce: In a bowl, combine Greek yogurt, chopped cucumber, minced garlic, lemon juice, fresh dill, and sea salt. Mix well, taste, and adjust salt if needed.
- Serve: Present the kofta kebabs over pita bread with the tzatziki sauce and optional garnishes such as extra herbs, pickled onions, or tomatoes. Enjoy immediately.
