This Beef Burrito Skillet is a delicious and hearty one-pan meal that combines seasoned ground beef, black beans, corn, and tortilla strips, all cooked together in a flavorful enchilada sauce. Topped with melted Mexican blend cheese and garnished with cilantro and sour cream, it’s a quick and satisfying dinner perfect for busy weeknights.

  • Total Time: 30 minutes
  • Yield: 4 servings

Ingredients

Meat and Seasonings

  • 1 lb lean ground beef (93/7)
  • 1 package (1 oz) taco seasoning
  • 1/2 cup water

Sauce and Vegetables

  • 1 can (10 oz) enchilada sauce
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen corn, thawed

Other Ingredients

  • 6 taco sized flour tortillas (or 3 burrito sized), cut into 1″ strips
  • 2 cups shredded Mexican blend cheese
  • Cilantro, for garnish (optional)
  • Sour cream, for garnish (optional)

Instructions

  1. Cook the Beef: In a medium skillet over medium heat, cook the ground beef until no pink remains, about 7 to 9 minutes. Drain any excess fat from the skillet and return the beef to the pan.
  2. Add Seasoning and Sauce: Stir in the taco seasoning, water, and enchilada sauce. Continue cooking over medium heat for 3 to 5 minutes, allowing the mixture to thicken slightly and the flavors to combine.
  3. Add Beans, Corn, and Tortillas: Reduce the heat to low and add the drained black beans, thawed corn, and tortilla strips. Gently stir and cook for an additional 3 to 4 minutes so the tortillas soften and absorb the sauce.
  4. Melt Cheese: Sprinkle shredded Mexican blend cheese evenly over the skillet. Stir just until the cheese melts and blends into the dish.
  5. Serve: Remove from heat and serve immediately. Garnish with fresh cilantro and sour cream if desired for a creamy, fresh finish.

  • You can substitute homemade enchilada sauce for the canned version for a fresher taste.
  • Use corn tortillas instead of flour tortillas for a gluten-free option.
  • For a spicier dish, add diced jalapeños or hot sauce to taste.
