This Beef and Cheddar Sandwich recipe features thinly sliced deli roast beef heated in rich beef stock and topped with a creamy cheddar cheese sauce, all served on soft onion Kaiser rolls spread with tangy Arby’s sauce. Perfect for a hearty and comforting meal, this sandwich combines tender beef and melty cheese for a flavorful and satisfying lunch or dinner option.

  • Total Time: 20 minutes
  • Yield: 4 sandwiches

Ingredients

For the Cheese Sauce:

  • ½ cup heavy cream
  • 2 cups shredded cheddar cheese

For the Sandwich:

  • 2 cups beef stock or broth
  • 1 pound deli roast beef, thinly sliced
  • 4 onion Kaiser rolls
  • ¼ cup Arby’s sauce

Instructions

  1. Prepare the Cheese Sauce: In a non-stick skillet, combine the heavy cream and shredded cheddar cheese. Heat over medium-low heat, stirring constantly until the cheese melts completely and the sauce is smooth. Once ready, cover and set aside to keep warm.
  2. Heat the Beef: Warm the beef stock in a 2-quart or larger saucepot over medium heat. Add the roast beef in small batches (3-4 slices at a time) into the hot stock and heat for 30-60 seconds to warm through. Use tongs to remove the beef and transfer it to a plate. Repeat until all beef is heated.
  3. Assemble the Sandwiches: If necessary, slice the onion Kaiser rolls in half. Spread 1 tablespoon of Arby’s sauce on the bottom half of each roll. Add a quarter of the warmed roast beef on top, then generously drizzle with 3-4 tablespoons of the warm cheese sauce. Top with the bun halves and serve immediately for the best flavor and texture.

Notes

  • If your cheese sauce solidifies, gently warm it over low heat while stirring, and add 1-2 tablespoons of heavy cream as needed to re-melt and smooth it out.
  • For best melting results, shred your own cheddar cheese instead of using pre-packaged shredded cheese.
