Ingredients
Sweet Potatoes and Filling
- 4 small sweet potatoes
- 2 cups shredded rotisserie chicken
- 1/2 cup BBQ sauce (store-bought or homemade)
- 1/2 cup shredded Monterey Jack cheese (or cheddar)
Toppings
- Corn salsa (quantity as desired)
- Pickled red onions (quantity as desired)
- Chopped avocado (quantity as desired)
- Fresh cilantro leaves (quantity as desired)
Instructions
- Preheat and Prepare Sweet Potatoes: Preheat your oven to 425°F (220°C) and line a baking sheet with foil for easy cleanup. Prick each sweet potato several times with a fork to allow steam to escape during roasting, then place them directly on the prepared baking sheet.
- Roast Sweet Potatoes: Roast the sweet potatoes in the preheated oven for 40 to 50 minutes until they are fork tender. You can check doneness by piercing each potato with a fork—if it slides in easily, they’re ready.
- Prepare BBQ Chicken Mixture: While the sweet potatoes roast, combine the shredded rotisserie chicken and BBQ sauce in a medium bowl. Stir well until the chicken is evenly coated in the sauce, ensuring every bite is flavorful.
- Stuff Sweet Potatoes: Once roasted, remove the sweet potatoes from the oven. Carefully slice each potato open lengthwise using a fork and knife, then gently fluff the inside flesh to create space for the filling.
- Fill and Add Cheese: Spoon the BBQ chicken mixture evenly into each fluffed sweet potato. Sprinkle the shredded Monterey Jack cheese over the barbecue chicken on each potato to add a creamy, melty layer.
- Broil to Melt Cheese: Place the stuffed sweet potatoes under the oven broiler on high for 2 to 3 minutes. Keep a close eye as the cheese melts and becomes lightly browned without burning.
- Add Toppings and Serve: Remove the potatoes from the oven and top with your choice of corn salsa, pickled red onions, chopped avocado, and fresh cilantro leaves. Serve immediately while warm and enjoy!
Notes
- Use rotisserie chicken for convenience, but shredded cooked chicken breast works well too.
- Adjust BBQ sauce amount to taste depending on how saucy you like your filling.
- For a vegetarian version, substitute chicken with black beans or grilled vegetables.
- Leftover stuffed sweet potatoes reheat well in an oven or air fryer.
- Pickled red onions can be homemade or store-bought for ease.
