Ingredients
Pizza Base
- 1 homemade pizza dough, or storebought crust
- 1 tablespoon olive oil
Toppings
- ½ cup (148 g) BBQ sauce
- 1 ½ cups (130 g) cooked shredded chicken
- ¼ cup (24 g) onion, thinly sliced
- 1 ½ cups (148 g) mozzarella cheese, shredded
- Cilantro for topping, optional
Instructions
- Prepare the dough: Prepare the homemade pizza dough according to its recipe instructions or use a storebought crust.
- Preheat the oven: Adjust the oven rack to the lower-third position and preheat the oven to 475°F (246°C).
- Shape the dough: Roll the dough into a 12-inch circle directly on a pizza pan or pizza peel if using a stone. Spray the pan with non-stick spray and lightly dust with flour or cornmeal to prevent sticking.
- Apply oil and BBQ sauce: Brush the top of the dough with olive oil, then spread half of the BBQ sauce evenly over the crust, leaving a 1-inch rim around the edges.
- Add toppings: Evenly distribute the cooked shredded chicken and thinly sliced onions over the sauce. Spoon the remaining BBQ sauce on top of the chicken and onions.
- Add cheese: Spread shredded mozzarella cheese evenly over the pizza topping mixture.
- Bake the pizza: Bake for 15-17 minutes, rotating halfway through, until the crust is golden brown and cheese is melted and bubbly.
- Cool and garnish: Remove from oven and let the pizza cool on a wire rack for 10 minutes. Garnish with fresh cilantro if desired, slice, and serve.
Notes
- Weigh the flour carefully when making homemade dough for consistent results.
- Use cooked chicken such as rotisserie chicken; raw chicken is not recommended due to short baking time.
- For more flavor, toss the shredded chicken in some of the remaining BBQ sauce before placing on the pizza.
- Red onions offer a spicier kick, while yellow or sweet onions provide milder flavor.
- Make ahead tip: Baked and cooled pizza can be wrapped in plastic wrap and refrigerated for up to 3 days or frozen for up to 3 months. Reheat before serving.
