This Banana Cobbler is a deliciously comforting dessert featuring a luscious banana filling topped with a crunchy oat and pecan streusel. It’s baked until golden and perfect served warm with vanilla ice cream, making it an ideal treat for banana lovers.

  • Total Time: 1 hour 5 minutes
  • Yield: 6 servings

Ingredients

For the Topping:

  • ¾ cup packed light brown sugar
  • ½ cup self-rising flour
  • ½ cup (1 stick) unsalted butter, softened to room temperature
  • 1 cup uncooked old-fashioned oats
  • ½ cup chopped pecans

For the Filling:

  • 1 cup self-rising flour
  • 1 cup sugar
  • 1 cup milk
  • 2 teaspoons banana extract (optional)
  • ½ cup (1 stick) butter, melted
  • 4 ripe bananas, sliced

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and spray a 2-quart or 9×9-inch baking dish with nonstick cooking spray to prevent sticking.
  2. Prepare Streusel Topping: In a bowl, combine the light brown sugar, self-rising flour, and softened butter. Use a fork to stir until the mixture becomes crumbly. Then mix in the oats and chopped pecans evenly. Set this topping mixture aside.
  3. Make the Filling: In a medium bowl, whisk together the self-rising flour, sugar, and milk (add banana extract if using) until just blended. Stir in melted butter until the batter is smooth.
  4. Assemble the Cobbler: Pour the filling batter into the prepared baking dish. Layer the sliced ripe bananas evenly on top of the batter. Then gently crumble the prepared streusel topping evenly over the banana layer.
  5. Bake: Place the baking dish in the preheated oven and bake for 45-50 minutes, or until the top is golden brown and the cobbler is no longer jiggly in the center.
  6. Serve: Allow the cobbler to cool slightly before serving. It’s excellent topped with vanilla ice cream and extra banana slices if desired.

Notes

  • This recipe was originally made with a now unavailable banana milk product but has been successfully adapted using regular milk or banana protein drinks.
  • Adding about a teaspoon of banana extract to the milk intensifies the banana flavor if desired.
  • Use ripe bananas with brown spots for the best natural sweetness and flavor in the cobbler.
