  • Total Time: 2 hours 40 minutes
  • Yield: 12 cinnamon rolls

Ingredients

Dough:

  • 1 cup (240 ml) lukewarm milk (120-130°F)
  • 6 Tablespoons (85 g) unsalted butter
  • ½ cup (100 g) granulated sugar
  • 4 ½-5 cups (540-600 g) all-purpose flour, spooned and leveled
  • 2 ¼ teaspoons instant yeast
  • 1½ teaspoons salt
  • ½ cup mashed banana (about 1 large banana)

Filling and Assembly:

  • 4 Tablespoons (57 g) unsalted butter, very soft
  • ½ cup (107 g) packed light brown sugar
  • 1 tablespoon cinnamon
  • 2 large bananas, thinly sliced
  • ¼ cup (60 ml) heavy cream, slightly warmed

Cream Cheese Frosting:

  • 4 ounces cream cheese, softened to room temperature
  • 4 tablespoons (57 g) unsalted butter, softened
  • 1 ½ cups (170 g) powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Warm milk: In a medium saucepan, heat milk, butter, and sugar until butter is melted and the temperature reaches 120°F-130°F (for instant yeast). Remove from heat to activate the yeast properly.
  2. Make dough: In a stand mixer bowl with paddle attachment, combine 4 ½ cups flour, yeast, and salt. Add the melted butter mixture and mashed bananas. Stir until a shaggy dough forms.
  3. Knead the dough: Attach the dough hook to your mixer and knead on medium speed for 6-8 minutes until smooth and elastic but slightly sticky. Add flour as needed, but no more than 5 cups total. Alternatively, knead by hand on a floured surface for 8-10 minutes.
  4. Let the dough rise: Lightly grease a large bowl, place dough inside, cover, and let it rise in a warm place until doubled in size, about 1 to 1 ½ hours.
  5. Roll out the dough: Turn the dough onto a floured surface and roll into an 18×12 inch rectangle.
  6. Spread filling: Spread softened butter over the dough leaving a ½-inch border at the top edge. Mix brown sugar and cinnamon, then sprinkle evenly over butter. Place sliced bananas on top.
  7. Cut rolls: Starting from the long edge with filling, roll the dough tightly into a log. Pinch to seal. Cut into 12 equal rolls using a serrated knife or dental floss for clean cuts.
  8. Let rolls rise: Butter or spray a 9×13 inch baking dish. Place rolls spiral side up in pan, cover, and let rise until nearly doubled and slightly puffy, about 45 minutes.
  9. Bake rolls: Preheat oven to 350°F (177°C). Pour warmed heavy cream over rolls. Bake for 30-35 minutes until golden brown. Cool in pan for about 20 minutes.
  10. Make cream cheese frosting: Beat cream cheese and butter on medium-high speed until smooth, about 2 minutes. Gradually add powdered sugar and mix on low speed until combined. Beat in vanilla and then beat on medium-high until fluffy, 1-2 minutes.
  11. Ice rolls: Spread frosting over cinnamon rolls while still slightly warm to allow it to melt slightly into the rolls.

Notes

  • Storage: Store frosted cinnamon rolls in the refrigerator for up to 5 days. Rewarm in the oven or microwave before serving.
  • Make ahead: After the first rise, roll out, fill, cut, and place rolls in a pan. Cover and refrigerate overnight. Let rise at room temperature 45-60 minutes before baking.
  • Freezing: Rolls can be frozen before or after baking for up to 3 months. Thaw overnight in fridge before baking or reheating. Reheat in oven or microwave.
  • Bread maker: Dough can be prepared in a bread maker following manufacturer’s instructions for yeast dough.
  • Flour: All-purpose flour is recommended for best results.
  • Yeast: Instant yeast is used here; active dry yeast can be substituted 1:1 but requires longer rising times and lower milk temperature.
  • Milk: Whole milk preferred for tenderness but low-fat milk can be used. Milk must be lukewarm to activate yeast.
  • Butter: Unsalted butter is preferable to control salt content. Adjust salt accordingly if using salted butter.
  • Cream cheese: Use full-fat cream cheese for frosting for best texture and flavor.
