Ingredients
Vegetables
- 2 cups cherry or grape tomatoes
- 1 red bell pepper, diced
- ½ small red onion, diced
- 3 cloves minced garlic
- 1 cup chopped baby spinach
Dairy
- 8 ounces feta cheese
- 4 large eggs
Oils and Spices
- 4 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon sea salt
- ½ teaspoon dried thyme
- ½ teaspoon ground black pepper
- ½ teaspoon red pepper flakes
Optional Toppings
- Chopped fresh basil
- Fresh chives
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to get it ready for roasting the vegetables and baking the eggs.
- Prepare Vegetables and Feta: If using individual ramekins, evenly distribute the cherry tomatoes, diced red bell pepper, diced red onion, minced garlic, and feta cheese among 4 oven-safe dishes. Drizzle one tablespoon of olive oil over each. If using a single baking dish, combine all the vegetables in the dish and place the block of feta cheese in the center. Drizzle all the olive oil over the veggies and feta.
- Mix Spices: In a small bowl, combine dried oregano, sea salt, dried thyme, ground black pepper, and red pepper flakes. Sprinkle this seasoning mix evenly over the feta and vegetables, dividing equally if using individual dishes.
- Bake Veggies and Feta: Place the ramekins on a baking sheet or put the large baking dish directly into the preheated oven. Bake for 25 minutes to allow the veggies to soften and the feta to begin melting.
- Combine with Spinach: Remove the dishes from the oven and stir the contents to blend the melted feta evenly with the vegetables. Stir in the chopped baby spinach until well combined.
- Add Eggs: Create a small well or four separate wells in the mixture in each dish and carefully crack one egg into each well.
- Bake Eggs: Return the dishes to the oven and bake for an additional 10 minutes, or until the egg whites are set but yolks remain slightly runny.
- Garnish and Serve: Top with optional chopped fresh basil or chives. Serve warm with crusty baguette, toast, or pita bread for dipping into the delicious baked eggs and veggies.
Notes
- Using individual ramekins helps portion control and creates a visually appealing presentation.
- You can use any firm white cheese if feta is not available, but the flavor profile will change.
- Adjust red pepper flakes to your spice preference for milder or spicier results.
- Leftovers can be refrigerated and gently reheated in the oven or microwave.
- For a dairy-free variation, omit the feta and use a suitable vegan cheese alternative.
