Ingredients
Filling
- 4 Flour Tortillas (10 inches)
- 8 oz Cream Cheese, softened
- 4 oz Diced Green Chilies (canned)
- 1 cup Cheddar Cheese, shredded
- ½ cup Red Onion, finely diced
- ½ cup Bell Pepper, finely diced
- 3 Tablespoons Sour Cream
- 1 teaspoon Paprika
- 1 teaspoon Garlic Powder
- ½ teaspoon Onion Powder
- ⅛ teaspoon Cayenne Pepper
Basil Pesto Sour Cream Dipping Sauce
- ½ cup Sour Cream
- 2 Tablespoons Basil Pesto
Instructions
- Preheat Oven: Preheat your oven to 350ºF (175ºC) and line a baking sheet with parchment paper to prevent sticking and make cleanup easy.
- Prepare Filling: In a large mixing bowl, combine the softened cream cheese, diced green chilies, shredded cheddar cheese, finely diced red onion, bell pepper, 3 tablespoons of sour cream, paprika, garlic powder, onion powder, and cayenne pepper. Use a hand mixer or stand mixer to blend until the mixture is smooth and creamy.
- Assemble Tortillas: Divide the filling evenly into four portions. Spread each portion in a thin, even layer over each flour tortilla, covering it completely. Starting at one edge, roll each tortilla tightly into a log shape.
- Slice Rolls: Using a serrated knife, cut each rolled tortilla at a 45-degree angle into five even pieces. Discard the ends as they can be uneven and less appealing.
- Bake Antojitos: Place the cut pieces flat onto the prepared baking sheet. Bake in the preheated oven at 350ºF for 8 minutes to heat through and meld the flavors.
- Broil for Finish: After baking, switch your oven to the high broil setting. Broil the Antojitos for 5 minutes, watching carefully to ensure they do not burn. This step adds a golden, slightly crispy texture to the outside.
- Prepare Dipping Sauce: While the Antojitos bake, combine ½ cup sour cream with 2 tablespoons basil pesto in a small bowl to create a flavorful dipping sauce.
- Serve: Let the Antojitos cool slightly on the baking sheet, then serve warm alongside the basil pesto sour cream for dipping.
Notes
- Watch the Antojitos closely when broiling to prevent burning due to the high heat.
- For extra spice, add more cayenne pepper or include a dash of hot sauce into the filling.
- These can be prepared ahead and refrigerated before baking; just add a couple extra minutes to baking time if serving from cold.
- Use freshly made basil pesto or store-bought for convenience in the dipping sauce.
- If desired, substitute cheddar cheese with Monterey Jack or a Mexican blend for a different flavor profile.
