Baked Cottage Cheese Eggs is a nutritious and satisfying breakfast casserole that combines eggs, creamy cottage cheese, fresh vegetables, and melty mozzarella cheese. This easy-to-make dish is baked to perfection, yielding a golden brown, fluffy, and protein-packed meal that’s perfect for meal prep or a hearty brunch.

  • Total Time: 50 minutes
  • Yield: 8 servings

Ingredients

Egg & Cheese Mixture

  • 12 large eggs
  • 2 cups (440 g) cottage cheese, 4% fat recommended
  • ½ cup (55 g) shredded mozzarella or Monterey Jack cheese
  • ½ tsp garlic powder, optional
  • ⅓ tsp sea salt, more to taste
  • Black pepper, to taste

Vegetables

  • 1 cup fresh spinach, chopped
  • ¼ cup diced tomatoes or diced red bell pepper
  • ⅓ onion, thinly sliced

Other

  • Olive oil or cooking spray (for greasing the baking dish)

Instructions

  1. Preheat and Prepare: Preheat your oven to 350°F (180°C) and generously grease a 9×13-inch baking dish with olive oil or cooking spray to prevent sticking.
  2. Mix Eggs and Cheese: In a large bowl, crack the eggs and add the cottage cheese, sea salt, black pepper, and optional garlic powder. Whisk until well combined and creamy.
  3. Add Vegetables and Cheese: Gently fold in chopped spinach, diced tomatoes or red bell peppers, thinly sliced onions, and shredded mozzarella or Monterey Jack cheese. For a creamier texture, you may blend the eggs with the cottage cheese before adding the vegetables.
  4. Transfer to Dish: Pour the mixture evenly into the prepared baking dish. Spread it out so the cheese and vegetable distribution is uniform. Optionally, sprinkle extra shredded cheese on top for a cheesier crust.
  5. Bake: Place the dish in the preheated oven and bake for 35 to 45 minutes, or until a toothpick inserted in the center comes out clean and the edges turn golden brown.
  6. Cool and Serve: Remove the casserole from the oven and allow it to cool for about 15 minutes before slicing and serving.

Notes

  • Meal Prep & Storage: Cool completely to room temperature, slice into portions, and store in an airtight container in the refrigerator for up to 3 days.
  • Freezing: After cooling and slicing, pack portions into zipper bags and freeze for up to 3 months.
  • Reheating: Thaw frozen portions overnight in the fridge, then microwave for 30-60 seconds or warm in a 350°F (180°C) oven until heated through.
