Ingredients
Ingredients
- 3-4 cups Corn Kernels
- Zest from 1 Lime
- Juice from 2 Limes
- 2 tablespoons Butter
- 3/4 cup Whipping Cream
- Dash of Red Pepper Flakes
- 2 tablespoons Finely Chopped Chives
- Salt to taste
Instructions
- Melt Butter: In a large frying pan over medium heat, melt 2 tablespoons of butter until fully liquefied.
- Add Corn and Lime Juice: Once the butter is melted, add the 3-4 cups of corn kernels to the pan along with the juice from 2 limes. Season the mixture with salt to taste.
- Cook Down Liquid: Cook the corn mixture, stirring occasionally, until the liquid reduces by half, approximately 5 minutes. This concentrates the flavors and slightly softens the corn.
- Incorporate Cream and Spices: Stir in 3/4 cup of whipping cream, a dash of red pepper flakes, and the zest from 1 lime. Continue cooking for another 5 minutes, allowing the cream to thicken and blend with the other ingredients.
- Final Seasoning and Garnish: Taste and add more salt if needed. Stir in 2 tablespoons of finely chopped chives to add freshness. Serve warm and enjoy!
Notes
- Rub the limes on the counter before cutting to maximize juice extraction.
- Zest the lime before cutting it, after rubbing, and set aside for use later in the recipe.
- This dish pairs well as a side for grilled meats or seafood.
- Use fresh corn kernels for the best natural sweetness and texture.
- For a richer flavor, substitute whipping cream with half-and-half or heavy cream as preferred.
