Ingredients
For the Miso Sauce
- 2 tablespoons white miso paste
- 2 tablespoons soy sauce (regular or gluten-free tamari)
- 1 tablespoon mirin (sake can be substituted)
- 1 teaspoon grated garlic
- 1 teaspoon grated ginger
For the Salmon and Vegetables
- 2 salmon fillets, center cut, 6 ounces each
- 2 large carrots, sliced into ¼-inch thick slices
- 1 cup snow peas or sugar snap peas
- Salt and pepper to taste
Instructions
- Prepare the Miso Sauce: In a small bowl, whisk together the white miso paste, soy sauce, mirin, grated garlic, and grated ginger until the mixture is fully combined and smooth.
- Coat the Salmon and Carrots: Brush the salmon fillets generously with the miso sauce and lightly season with salt and pepper. Toss the sliced carrots with any remaining miso sauce to coat them evenly, enhancing their flavor.
- Cook Salmon and Carrots: Place the coated salmon fillets and carrots in the air fryer basket, ensuring they are arranged in a single layer without overcrowding to allow proper air circulation. Set the air fryer to 400°F and cook for 8 minutes.
- Add Snow Peas and Continue Cooking: After the initial 8 minutes, add the snow peas or sugar snap peas to the air fryer basket with the salmon and carrots. Continue cooking for an additional 2 to 3 minutes or until the salmon is lightly browned on top and flakes easily with a fork, and the vegetables reach your preferred tenderness.
- Serve and Store: Serve the salmon and vegetables immediately, optionally with steamed rice or your choice of side. Store any leftovers in an airtight container in the refrigerator for up to two days.
Notes
- Air Fryer Cooking Time: Cooking times may vary depending on the brand and wattage of your air fryer. Use an instant-read thermometer to check that the salmon reaches an internal temperature of 145°F for safe consumption. Taste test the vegetables for doneness according to your preference.
- Salmon Selection: Choose salmon fillets of similar thickness to ensure even cooking. The fillets used in this recipe are approximately 1 inch thick, 2 inches wide, and 6 inches long.
- Fresh or Thawed Salmon: Both fresh and previously frozen (thawed) salmon fillets can be used with similar results.
- Fillet Shape: Salmon fillets come in rectangular shapes with skin on one side or as flatter rectangular cuts. Cooking time may vary slightly based on thickness.
- Salmon Source: Opt for wild-caught salmon when possible, as it tends to be lower in fat and richer in essential minerals compared to farm-raised salmon.
