This Air Fryer Lasagna Fritta recipe is an Olive Garden copycat, offering crispy, cheesy rolled lasagna bites cooked to perfection in an air fryer. Made with lasagna noodles, a blend of five Italian cheeses, Italian seasoning, and a crunchy breadcrumb coating, these frittas are served with marinara and Alfredo sauce for dipping. They’re a delicious appetizer or snack that combines the classic flavors of lasagna in a fun, portable form.

  • Total Time: 1 hour 34 minutes (includes freezing time)
  • Yield: 10 lasagna fritta rolls

Ingredients

Lasagna Roll Filling

  • 10 ounces Lasagna Noodles (about 10 noodles)
  • 15 ounces Whole Milk Ricotta Cheese
  • ½ cup Freshly Grated Parmesan Cheese
  • ½ cup Freshly Grated Romano Cheese
  • ½ cup Freshly Grated Asiago Cheese
  • ½ cup Freshly Grated Mozzarella Cheese
  • 2 tablespoons Italian Seasoning
  • 2 Large Eggs

Batter

  • 1½ cups Italian Bread Crumbs or Panko
  • 2 tablespoons Olive Oil
  • ½ cup Finely Grated Parmesan Cheese
  • 2 Large Eggs

Cooking Oils

  • Olive Oil Spray (for air fryer)
  • Canola Oil (for pan-frying)

Sauces

  • Marinara Sauce (jarred)
  • Homemade Alfredo Sauce (optional, can include leftover Parmesan, Romano, or Asiago cheese)

Instructions

  1. Prepare Noodles: Boil lasagna noodles according to package directions until al dente. Drain and rinse under cold water to cool for handling. If your noodles have ribbon edges, trim them off.
  2. Make Cheese Mixture: In a medium-sized bowl, mix together the 2 eggs, ricotta, Parmesan, Romano, Asiago, mozzarella cheeses, and Italian seasoning until fully combined.
  3. Assemble Rolls: Lay the noodles flat on a clean surface. Spread the cheese mixture evenly over each noodle, then carefully roll each noodle into a 2-3 inch log.
  4. Freeze Rolls: Place the rolled noodles on parchment or wax paper-lined container, cover, and freeze for 1-2 hours to firm up for easier breading and cooking.
  5. Prepare Batter: Whisk 2 eggs in a shallow dish. In a microwave-safe bowl, mix Italian bread crumbs with 2 tablespoons olive oil and microwave for 1-2 minutes, stirring every 30 seconds, until golden brown. Let cool then stir in ½ cup Parmesan cheese.
  6. Bread Rolls: Dip each frozen lasagna roll first in the beaten eggs, then coat completely in the breadcrumb mixture, shaking off excess between dips.
  7. Air Fryer Method: Spray the air fryer basket with olive oil spray. Place the breaded lasagna fritta in the basket and lightly spray the tops with oil. Air fry at 400°F for 8 minutes, flip, then cook for another 6-8 minutes until golden and crispy. Spray with oil if they appear dry during cooking. Remove and serve immediately with marinara and/or Alfredo sauce.
  8. Pan-Fry Method (Optional): Heat canola oil in a pan over medium-high heat. Carefully place the frittas into the hot oil and fry for about 2 minutes per side, until golden brown. Drain on paper towels and serve with sauces.

Notes

  • Freezing the rolls before breading helps them hold their shape and prevents falling apart during cooking.
  • Use a mix of five cheeses for authentic flavor, but you can substitute or omit Asiago if unavailable.
  • Air frying provides a crisp exterior with less oil than pan-frying.
  • Leftover cheeses are great to add to the Alfredo sauce for enhanced taste.
  • This recipe yields about 10 lasagna fritta rolls, perfect for an appetizer or snack for 4-6 people.
