This 30 Minute Prawn Rice is a vibrant and flavorful one-pan dish featuring succulent prawns cooked in a rich tomato sauce with peas, red pepper, and aromatic spices. Perfect for a quick yet satisfying meal, it combines juicy prawns steamed gently in a spicy, savory tomato-infused rice, offering both comfort and a nutritious balance in every bite.

  • Total Time: 30 minutes
  • Yield: 4 servings

Ingredients

Vegetables and Aromatics

  • 3 cloves garlic, minced
  • 1 yellow/brown onion, chopped
  • 1 red pepper, chopped
  • 8 medium vine-ripened tomatoes, chopped
  • 200 g (1 ⅓ cups) frozen peas

Seafood

  • 275 g (1 cup) frozen prawns, peeled and defrosted

Grains and Liquids

  • 245 g (1 ¼ cups) rice
  • 500 ml (2 cups) vegetable stock made with a stock cube

Spices and Oils

  • 2 teaspoons olive oil
  • ¼ teaspoon paprika
  • ¼ teaspoon chilli powder

Instructions

  1. Prepare Stock: Boil water to make your vegetable stock with the stock cube, then set it aside while you prepare the tomato sauce and peel the prawns if needed.
  2. Sauté Aromatics: Heat the olive oil in a high-sided skillet or pan over medium heat. Add the chopped onions and minced garlic, sautéing for 5-6 minutes until soft and fragrant.
  3. Make Tomato Sauce: Add the chopped fresh tomatoes and red pepper to the pan. Let the tomatoes break down, creating a sauce while the peppers soften. If the mixture seems dry, add 2-3 tablespoons of water to help it along.
  4. Add Rice and Spices: Stir the rice into the tomato sauce to coat it well. Pour in the prepared vegetable stock, then sprinkle in paprika and chilli powder. Stir everything together.
  5. Combine Prawns and Peas: Add the defrosted prawns and frozen peas to the pan. Bring the mixture to a gentle simmer.
  6. Cook Rice and Prawns: Cover the pan with a lid and reduce the heat to low. Simmer for 12-15 minutes, or until the rice has absorbed the stock and is fully cooked. The prawns will cook tenderly while steaming in the rice.
  7. Serve: Once cooked, top with fresh basil leaves and serve with lemon slices for added brightness. Enjoy by sharing the dish directly from the pan.

Notes

  • If you prefer golden seared prawns, sauté them at the beginning instead of adding raw, then set aside and stir them back in at the end to serve.
  • Pre-peeled prawns can be used and added exactly the same way.
  • Prawns and shrimp are interchangeable in this recipe without affecting the flavor.
  • For extra spice, increase the amount of chilli powder or add chilli flakes to taste.
