Ingredients
Chili
- 1 (16.9 oz) carton Kettle & Fire Bone Broth Beef Chili With Beans Soup
Tortillas and Cheese
- 8 grain-free tortillas
- 1 (8 oz) block Monterey Jack cheese, slice ¾ of the block into ¼-inch slices, shred the remaining ¼
Optional Garnish
- Thinly sliced green onions for garnish
Instructions
- Preheat Oven: Preheat your oven to 375 degrees Fahrenheit to get it ready for baking the enchiladas.
- Prepare Baking Dish: Pour ¼ of the carton of chili into a 2 ½ quart or 9×13 inch baking dish and use a rubber spatula to spread it evenly to coat the bottom. This layer will prevent sticking and add flavor from the base.
- Warm Tortillas: Heat a dry stainless steel skillet over medium heat. Warm each tortilla one at a time for about 30 seconds on each side to make them pliable and easy to roll.
- Fill and Roll Enchiladas: Place two slices of Monterey Jack cheese on one side of each warm tortilla, then gently roll it up. Place each rolled tortilla seam side down into the chili-coated baking dish.
- Add Chili and Cheese Topping: Pour the remaining chili over the rolled enchiladas. Spread evenly with a spatula to coat the tops. Sprinkle the shredded Monterey Jack cheese over the chili-topped enchiladas.
- Bake Covered: Cover the dish tightly with foil and bake for 15 minutes to allow flavors to meld and cheese to melt.
- Bake Uncovered: Remove the foil and continue baking for an additional 8 to 10 minutes until the cheese turns golden brown and bubbly.
- Garnish and Serve: Remove from oven and sprinkle with thinly sliced green onions if desired before serving.
Notes
- Use grain-free tortillas for a gluten-free option.
- Be sure to warm the tortillas to prevent cracking when rolling.
- The bone broth beef chili adds rich flavor and protein, enhancing the simple ingredients.
- Covering the casserole during the initial baking helps melt the cheese and heat through evenly.
- For a spicier dish, consider adding chopped jalapeños or hot sauce.
