This 25 Minute Vegan Cheesy Baked Gnocchi with Beans is a comforting, hearty dish made without boiling the gnocchi. Featuring vegan butter, garlic, marinara sauce, liquid vegan cheese, beans, greens, and topped with melted vegan cheese, this recipe combines easy stovetop sautéing with oven baking to deliver a deliciously cheesy and flavorful vegan meal.

  • Total Time: 25 minutes
  • Yield: 4 servings

Ingredients

Base Ingredients

  • 1 tbsp vegan butter or cooking oil
  • 3 garlic cloves, minced
  • 1 25-ounce jar marinara sauce
  • 1/4 cup store bought or homemade liquid vegan cheese, such as Miyoko’s, or coconut cream
  • 1/2 cup chopped basil

Main Ingredients

  • 1 package vegan gnocchi or 1 batch homemade vegan gnocchi
  • 1 15-ounce can cannellini beans, drained and rinsed
  • 1 cup chopped spinach, mustard greens, or other leafy greens
  • 1 cup vegan cheese, plus more for topping

Instructions

  1. Prep: Use an oven-safe skillet or Dutch oven. Organize your ingredients. Preheat your oven to 400°F (204°C).
  2. Sauté: Heat the vegan butter in the Dutch oven over medium heat until melted. Add minced garlic and sauté for about 3 minutes until fragrant and lightly browned.
  3. Mix: Turn off the heat but keep the pot on the stovetop. Stir in the marinara sauce, liquid vegan cheese, and chopped basil until combined. Add the gnocchi, cannellini beans, leafy greens, and 1 cup vegan cheese. Toss everything together to combine.
  4. Bake: Sprinkle additional vegan cheese on top. Cover the pot with its lid or cover the skillet tightly with foil. Place it in the preheated oven and bake for 10 minutes covered. Remove the lid or foil and continue baking for another 10 to 12 minutes to finish cooking the gnocchi and melt the cheese.
  5. Serve: When the cheese is melted and slightly browned, remove the pot from the oven using oven mitts. Optionally, sprinkle with fresh black pepper and extra basil. Serve hot and enjoy your cheesy vegan baked gnocchi!

Notes

  • Gluten Free: Use gluten-free vegan gnocchi for a gluten-free version.
  • Gnocchi Options: Substitute sweet potato gnocchi, cauliflower gnocchi, or your favorite homemade vegan pasta.
  • Liquid Vegan Cheese: Use store-bought options like Miyoko’s liquid mozzarella, a homemade bean-based vegan mozzarella, or coconut cream with added sea salt for extra flavor.
  • Storage: Store leftovers in an airtight container in the fridge for up to 5 days. Reheat in the oven at 300°F (149°C) for 5-7 minutes until warm.
